Lakeside Recipes: Apple Cake with Butterscotch Sauce

We’re just beginning to see the early signs of fall in the Berkshires, so we thought it would be a good idea to share with you one of our most beloved dessert recipes. Our guests and campers have dubbed it as “Most Likely to Cause a Stampede.”  Enjoy!

 

Lakeside’s Apple Cake with Butterscotch Sauce
4 cups apples, peeled and sliced
2 cups sugar
2 cups flour
1 ½ tsp baking soda
2 tsp cinnamon
1 tsp salt
2 eggs, beaten
¾ cup vegetable oil
2 tsp vanilla
1 cup chopped walnuts (optional)

In a large bowl, stir together apples and sugar. Add dry ingredients and stir well. In a separate bowl, whisk eggs, oil and vanilla. Add wet ingredients to apple mixture. Stir until thoroughly moistened. Batter will be very thick and stiff. Spread in a greased 9 X 13 pan and bake at 350 degrees for 45-50 min.

Butterscotch Sauce:
2 cups sugar
1 cup (2 sticks) butter
1 cup evaporated milk
2 tsp vanilla

Put all ingredients in a sauce pan. Stir and bring to a boil over medium heat. Bring to a boil and continue cooking and stirring an additional 3 minutes. Serve warm over cake.
