Lakeside Recipes: Apple Cake with Butterscotch Sauce

We’re just beginning to see the early signs of fall in the Berkshires, so we thought it would be a good idea to share with you one of our most beloved dessert recipes. Our guests and campers have dubbed it as “Most Likely to Cause a Stampede.”  Enjoy!

 

Lakeside’s Apple Cake with Butterscotch Sauce
4 cups apples, peeled and sliced
2 cups sugar
2 cups flour
1 ½ tsp baking soda
2 tsp cinnamon
1 tsp salt
2 eggs, beaten
¾ cup vegetable oil
2 tsp vanilla
1 cup chopped walnuts (optional)

In a large bowl, stir together apples and sugar. Add dry ingredients and stir well. In a separate bowl, whisk eggs, oil and vanilla. Add wet ingredients to apple mixture. Stir until thoroughly moistened. Batter will be very thick and stiff. Spread in a greased 9 X 13 pan and bake at 350 degrees for 45-50 min.

Butterscotch Sauce:
2 cups sugar
1 cup (2 sticks) butter
1 cup evaporated milk
2 tsp vanilla

Put all ingredients in a sauce pan. Stir and bring to a boil over medium heat. Bring to a boil and continue cooking and stirring an additional 3 minutes. Serve warm over cake.

Overcoming Homesickness

This past March many of our staff members attended the regional American Camp Association conference.  Below is what returning staff member, Jonathan Ferrini, learned about homesickness at the conference. Learn more about Jon and the other summer ministry team members on the Staff Bio Page.

As the temperature gets warmer and the snow is finally long gone, I can’t help but start to get excited for this summer at Lakeside. A small group of us were able to attend the American Camp Association New England Conference in March and while in small ways, we were able to share our ideas, many other speakers and camps shared their ideas with us and we were able to learn a lot. One of the most interesting things that I learned about was homesickness. Continue reading

Photos will be judged by the Lakeside staff and winners will be announced on January 31st February 7th, 2013.

Lakeside Update: July 2012

Through God’s grace, the Lakeside Christian Camp ministry is thriving – preparing children, teens and families for Christian life.

We are excited to report that the first week of summer camp was full and enrollment for following weeks looks very promising. More campers mean more ministry opportunities.
Part of the success this summer comes with the addition of three new and exciting programs: horseback riding, soccer, and worship music camp. Partnering with nearby White Horse Hill campers are enjoying high quality and safe riding instructions. The soccer program is supported by varsity athletes from Gordon College. And, the worship music camp is drawing talented Christian artists, such as Out of Hiding, to personally mentor campers in music and leadership skills. Continue reading

New Policies and Procedures

Food in Cabins
In order to maintain the highest of food allergy safety and health and wellness standards, we are implementing a new policy regarding food in cabins.

Food is no longer allowed in cabins due to food allergies and the fact that the food attracts unwanted pests.  Because of this we ask that campers refrain from bringing snacks and drinks to camp. (Bottled water and other sugar-free, dye-free drinks are fine.) Continue reading

New for 2012: Soccer Program

Soccer Program

The Lakeside soccer program is for middle-school age athletes who want to develop their athletic skills. Outstanding instruction, skill development and intense competition prepare the camper for future athletic competition. The soccer program is a time of “inspiration and perspiration” for young athletes to reach their potential through comprehensive athletic, spiritual and leadership training.

Information:

The Soccer Program will take place during Breakaway Camp.

Dates: July 8-14 and July 15-21

Available to students entering grades 7+8.

  • Register individual camper
  • Select Breakaway Camp 1 or 2 and click Next
  • Select Soccer Program
  • Complete registration process
